Wood Measuring Coffee Spoon with Clip and Bag of Local Roasted Coffee

These beans come from Tierra Madre, a program of women producers from a cooperative in Jinotega, Nicaragua. Through their membership, Tierra Madre women receive a premium to help obtain legal title to their land. These titles are key to accessing micro-credit loans for production and other economic activities, which provide a better quality of life for the women and their families. In addition to loans for production, the program provides credit training for women and support for improving family food security. 

As one member states, "With their help I was able to legally register my house. Now I am sure that it is mine and won't be taken away from me. On my farm, I planted 5,000 coffee trees, all of the coffee is in production." 

All in all, it's a pretty fine thing to be part of, especially when you don't even have to leave your house to do so. Enjoy. 

Fairtrade Medium Roast

There are two main methods of roasting; fluid-bed or drum roasting. The majority of roasting occurs with large drum roasters. This producer uses a 12lb fluid-bed roaster.

Imagine a fluid bed roaster as a hot air popcorn maker. Beans are suspended in a cylinder above heating elements. Air is drawn over the elements and through the beans causing the beans to move in a fluid motion. The person roasting has infinite control over temperature and roast speed, resulting in distinct roast characteristics and uniformity.

In a drum roaster green beans are put in a rotating cylinder and heat is applied, either underneath or through a conduit in the center.  

Heat transfer is much faster in a fluid-bed roaster, a critical factor when driving moisture out of the bean (time to first crack).  The less time the beans spend prior to this first crack the less acetic and quince acids forms, which can be quite irritating to the stomach.

This wood clip will not damage the bag. The 2 in 1 clip can be used to measure 1 tablespoon of your favourite coffee grounds to add to your cafe maker, or you can use the measurement to get the exact amount of coffee beans required for a terrific cup of coffee.  An airtight coffee bag will prevent the coffee beans or the grounds from having air get to them which can result in bitter tasting coffee.
